Chocolate Chip Cookie Cupcakes


 
Now that the GBBO has started it has got me inspired to baking even more than usual, I've gone through my pictures and blog to see what I have already done as I'm keen to make cakes I've not made before.
 
I bought cute little mini cookies as little snacks for work and thought I could make choc chip cookie cupcakes, and here we have them, I think they look rather adorable.
 
I followed a hummingbird bakery vanilla cupcake recipe for these and added my own twist.


Ingredients:

120g Plain Flour
140g Caster Sugar
1 1/2 tsp Baking Powder
a pinch of salt
40g unsalted butter
120ml whole milk
1 egg
1 1/4 tsp vanilla extract
100g Choc Chips

Vanilla Frosting:
250g Icing Sugar
80g Unsalted Butter
25ml Whole Milk
Couple drops of Vanilla Extract

To Make:

1. Pre-heat oven to 170°C / Gas3
2. Put the Flour, Sugar, Baking Powder, Salt and Butter in a mixer and mix until you get a sandy consistency. Gradually pour in half of the milk and mix until incorporated
3. Whisk the egg, vanilla extract and the rest of the milk together and pour into the flour mixture until incorporated - then add in your chocolate chips and stir through.

4. Spoon the mixture into cupcake cases until 2 thirds full and bake for around 15 - 20 minutes

5. Leave the cupcakes to cool

6. To make the frosting, beat the butter until pale in a mixer, then add in the sugar until incorporated

7 . Add in the milk and beat until light in colour and fluffy

8. Pipe onto your cooled cupcakes and top with mini choc chip cookies.
