Baking | White Chocolate Toblerone Cheesecake



So it was one of the girls birthday in work last week and as I've been bringing in cakes lately I offered to make something as a surprise for her birthday, I was told her favourite chocolate is white chocolate, white toblerone in particular. I decided I would do a white chocolate cheesecake as these always go down a treat and something a little bit different to a cake.
 
Let's just say it didn't even last a day! It tasted amazing, if I don't say so myself hehe. If you would like to make this cheesecake just keep reading....
 

You Will Need:

300g Digestive Biscuits
60g butter
400g Philadelphia (full fat)
150g caster sugar
200g White Chocolate - I used Milkybar
200ml Double Cream
3 White Chocolate Toblerone's for decoration

How To:

1) Crush digestives into fine crumbs, melt butter in pan and add digestives in until all combined.

2) place into a greased collapsible tin and pop into the freezer for 10 mins to set

3) Melt white chocolate, milkybar and leave to cool for 5 mins

4) beat the philly and sugar together until all combined and smooth

5) mix in the cooled white chocolate

6) whisk double cream until thick and then fold into your philly and sugar mixture, be careful not to mix it in though, essential that you fold it in.

7) Spread on top of your digestive base and pop into the fridge for around 4 hours or overnight

8) once the cheesecake has set, decorate with your white toblerone as desired.
