Milkystar Cheesecake

I do love cheesecake, especially when it's homemade! As winter is coming I thought I would make my last cheesecake of the year. Read on if you would like to make this :)

Ingredients

100g Digestive biscuits
25g butter
200g Philadelphia
75g Icing Sugar
100ml Double Cream
2 tsps. vanilla extract
1 Sharing pouch of milkystars

* This will make 2 or 3 small cheesecakes per above picture

Method

1) Crush digestives into fine crumbs, melt butter in a pan then add the digestives and stir until fully combined

2) Press the digestives into your chosen tin (I bought my love heart shape tins from B&Ms) and place in the freezer for 5 minutes to set

3) Beat the Philadelphia and Icing Sugar together until smooth

4) Whisk double cream until thick and fold into the Philadelphia mixture. Once all folded in, add half of the milkystars in and gently mix through

5) Pour filling onto the digestive base and place in the fridge to set for 3+ hours

6) Once set you can go ahead and decorate with your left over milkystars and serve

Does anyone else love a bit of cheesecake? This has to be my favourite so far :D
