Sunday Funday: Party Cupcakes

Back with more cupcakes, this time I decided to do party cupcakes. A vanilla sponge with a splash of  colour inside (I didn't put enough in). Topped with vanilla icing and a mini party ring. Keep reading to find out how to make these...

Cupcake Ingredients
150g unsalted butter
170g caster sugar
170g self-raising flour
3 medium eggs
1tsp vanilla extract
Hundreds and Thousands

Buttercream Ingredients
140g unsalted butter
225g Icing sugar
Mini party rings for decoration
1) Pre-heat oven to 200 / Gas 6. Line a muffin tin with cupcake cases (you will need 10-12)
2) Mix together butter and sugar until sugar has all melted in
3) In a separate jug crack your eggs and lightly whisk
4) Gradually fold in eggs and flour (sifted) to the sugar and butter mixture, then add in the vanilla extract and hundreds & thousands and fold through
5) Spoon the mixture into cupcake cases evenly and bake for 10-15 mins, turning half way through
6) Leave to cool and make your buttercream icing
7) Cream butter and sieve in icing sugar and mix until smooth and lump free. Pipe or spread onto cupcakes and top with a party ring
