Sunday Funday: Aero Bubble Cupcakes

It has been a while since I have baked some cupcakes so thought I would make some of these yummy mint Aero Bubble cupcakes. Keep reading for the recipe :)
Cupcake Ingredients:
150g Marg or Butter (I use Stork)
170g Caster Sugar
170g Self-Raising Flour
3 medium eggs

Vanilla ExtractSharing bag of Aero bubbles (leaving enough to decorate)

Buttercream Ingredients:

140g butter (again, I just used stork)
225g Icing Sugar 


1) Pre-heat oven to 200 / Gas 6. Line a muffin tin with your chosen cases (you will need about 10-12)

2) Mix together butter and sugar until sugar has all melted in

3) In a separate jug crack 3 eggs and lightly whisk

4) Gradually fold in eggs and flour (sifted) to the sugar and butter mixture & add in a teaspoon of vanilla extract and Aero bubbles
5) Spoon the mixture into cupcake cases evenly and bake for 10 - 15 mins, turning half way through.

6) Leave to cool and make your buttercream icing

7) In a bowl, cream butter and sieve in icing sugar until smooth and lump free, pipe onto the cupcakes.
