Sunday Funday: Jammie Dodger Cupcakes

 
 
Hello Lovelies,
 
First off, apologies for the lack of blogging lately as I have been in a Make Up course all last week which was exhausting so never got a chance to do any blogging! I am back now with these delicious Jammie Dodger Cupcakes.
 
Read on to find out how I made these:
 
 
Ingredients:

Cupcakes:
200g Plain Flour
240g Caster Sugar
2tsp Baking Powder
80g Butter (unsalted)
2 medium eggs
2tsp Vanilla Extract
100ml of milk (I used semi-skimmed)

Butter Icing:
175g butter (unsalted)
350g icing sugar
1tsp Vanilla Extract
1 packet of Jammie Dodgers for decoration

Method:

1) Preheat your oven to 180 or gas mark 4 and line a muffin tray with cupcake cases

2) Cream your butter and caster sugar together until it is all smooth then add in your vanilla extract and eggs

3) Sift your flour and baking powder and add some of this to your butter/sugar mixture and then some milk and keep adding little bits at a time and mixing until it's all included. 
*If you find your mixture is too runny add some flour and if it's too thick add a bit more milk*

4) pour the mixture into the cases about 3/4 full and bake for 15 mins turning half way through.

5) While your cupcakes are baking you can move on to making the icing. Cream together the butter and icing sugar, then add in your vanilla extract. Add to piping bag and pipe onto your cupcakes once they have cooled down. You can top them off with a whole Jammie Dodger or just half of one to the side.
