Sunday Funday: Confetti Cupcakes

Hello Lovelies,

My previous (and first) Sunday Funday went down well, you all seemed to love my Daisy Cupcakes, which you can see here.

I decided I would get my baking kit out again and do some more cupcakes as they are my absolute fave to make. I decided to do 'Confetti Cupcakes' which has hundreds & thousands through the sponge and icing with a little more sprinkled on top for good measure.

Cupcake Ingredients:
170g Marg or Butter (I use Stork)
170g Caster Sugar
170g Self-Raising Flour
3 medium eggs

Vanilla Extract
Hundreds & Thousands

Buttercream Ingredients:

140g butter (again, I just used stork)
225g Icing Sugar

1-2 tsps. of lemon flavouring (optional)

Recipe:

1) Pre-heat oven to 200 / Gas 6. Line a muffin tin with your chosen cases (you will need about 10-12)

2) Mix together butter and sugar until sugar has all melted in

3) In a separate jug crack 3 eggs and lightly whisk

4) Gradually fold in eggs and flour (sifted) to the sugar and butter mixture & add in a teaspoon of vanilla extract and hundreds and thousands (as much or as little as you like)

5) Spoon the mixture into cupcake cases evenly and bake for 10 - 15 mins, turning half way through.

6) Leave to cool and make your buttercream icing

8) In a bowl cream butter and sieve in icing sugar until smooth and lump free, add the lemon flavouring and hundreds & thousands if you wish until you get it to your desired taste. Pipe on to the cooled down cakes.

Let me know if you will try this recipe out ? I love it!

Love Gill x
